I have seem so many of these two together by now... noob here, are they a couple in canon? Genuine question from a RWBY ignorant. (But I like Blake as a total outsider)

As dumb as it sounds, that might make me watch the show.
Don't. It's a trainwreck that keeps on getting worse with each season. The first three seasons seem promising, but afterwards it rapidly goes downhill.

Oh, really? Sad. I usually don't let someone else's opinion to shape my actions, but I have wasted enough time with series that people hype a lot, to find they are just whatever, so I suppose if someone warn me about one that is popular enough like RWBY is, then it must hold some water.
Here's the thing, the show's original writer died during season three and his replacements are incompetent fucks who retconned stuff left and right to fit the narrative they wanted instead of what was the creator's intent, which includes making the narrator look like a racist. One issue with the first three seasons is that they didn't know how to handle the world building, so they released separate episodes dedicated to lore dumping. One of which talked about the four nations of the world, except one of the later seasons added furry Wakanda to the list, making it look like the narrator deliberately left out the one nation not ruled by humans. And even setting the retcons aside, they just suck at writing. One example would be season eight(?) adding a character who basically only existed for ship teasing, because there was none between men at that point, and it was blatantly obvious that he would die in an incredibly stupid and forced way for a piss poor attempt at adding drama, which is exactly what happened. Finally (for this list, not in general) for most of seasons 4-6 they've apparently forgotten that Ruby, the character sharing her name with the bloody show, was supposed to be the main character, and had her play second fiddle to Jaune, down to focusing primarily on his team, with her only being around to fill the slot which freed up at the end of season three.
I lack the words to describe how much I despise what the show has become. I loved it back in the day, but eventually the sunk cost fallacy wasn't enough to keep making me waste my time with what it had become. Just stick to the fanworks, they're the only good thing to come out of this dumpster fire of a show.

Out of all the inate shit you just said, this pisses me off in particular, because I feel like I see everywhere nowaday. I'll follow your advice, stay away from the serie, and stick to smutty fanfics where Ruby get spanked by her entire team over the course of a week.

Sorry, I didn't read all you said because you arr talking too deep in lore, of which I don't know at all, so it's not very helpful.
But about the part of the fanfic (which was mentioned in the comment above, that's how I know), I won't "stick" with that either. I don't think it make sense to dive in fanfic if I don't care about the source material enough to consume it. And personally speaking, I am not much of a fan of fanfics, so there's that.

Nothing you said about it being bad was wrong, (Though the lore dump episode you referred to does very clearly mention that the Faunus live in a separate place distinct from the four kingdoms, and I have no idea why you'd call it furry wakanda which is incredibly weird but whatever) but you're living in a fantasy if you believe this level of quality wasn't always where it was heading, or more like it was how it had always been.
You frame it like something changed, and especially refer to Monty as "The original writer", but he was always co-writer alongside Miles and Kerry, who were considered the Main Writers the entire time. Having created a framework for the setting, main characters, and then collaborated with those two on the broad strokes of where the story would go, he left it to them and focused on his primary job, which was animating the fights. As far as I can ever remember his biggest contributions after the point of creation amounted to "I have an idea for a fight and want the environment to be X", "We have new motion capture equipment I want to test, can there be a dance scene?" that sort of thing. We never heard anything at all about him wanting that to change or being discontent.
