in Zun's Touhou universe vampires aren't weak against the sun (They find it uncomfortable and drains some of their power) but are instead weak against water due to the bacteria inside it and can cause them to get sick.
In Rapattu's 4 seasons world everyone here is human thus making Remilia a normal girl who simply hates swimming as opposed it causing some kind of negative effect

Touhou vampires have all the same vampire weaknesses, as well as Setsuban (the beans used to ward off evil spirits) In the touhou Fighting games, this was made apparent since Remelia can't fight in outside environments without [cloudy] weather or without her umbrella system card.

I think that would just be a matter of Remilia's preference as opposed to that much of a weakness.
Also, Touhou vampires aren't weak against crosses (both Remilia and Flandre use them, and Remilia actually likes them).
Or rather, I don't like the water.I'm bad at swimming.I wonder if I could just observe...I'm - telling - you!I...I will melt if I enter the water!Have to do my best after all...I know that you have trouble swimming, but lying is bad. It's not a lie, it's the truth!
