You know, it's hard to categorize Junko. She's pure grudge incarnate, so technically she an absolute evil but that doesn't seem to do her total justice.
In a weird way she makes me think that she's a conglomerate of the seven deadly sins of man; evils that are universally hated but at the same time undeniably part of human nature.

That's basically what D&D alignments are made to do, though. Only actual animals get an out by just being nearly-mindless and incapable of making moral judgements on the actual ways they just hunt for food. All undead, meanwhile, are automatically evil just because being undead makes them hate all life, whether mindless or sentient (and life is apparently inherntly "good" as a moral absolute of the universe - except when it's some other Always Chaotic Evil creature). Something made up of grudges and sins would absolutely be categorized as Always Chaotic Evil.

No, what i mean is that Junko purified herself INTO grudge, she isn't made of fury as much as fury itself.
She isn't begrudged by nature but grudge itself after purification, a force of consciousness and therefore existence (if you follow the "i think, therefore i am thing")/ a law of consciousness and existence.
You can't apply moral alignments to the forces that make up the conscious in the first place.
Think Immaterium gods from Warhammer or Brahman "God".
For example, how can she be chaotic evil if retribution is a lawful thing to do?
What do you categorize a Paladin with righteous fury upon seeing the enemy use human shields/burn a trail of villagers? "
Would a Sinless Saint/Living Saint/Avatar of a god enacting divine retribution be considered chaotic evil?
How about a nation making sure every sacrifice to the defense of their home from a now retreating enemy is repaid in blood?
Cause all three of the above will and do feed Junko.
As a tangent, Junko also filled the near side of the moon with life, making her a literal harbinger of life and the moon, by your very own definition, automatically evil for hating life, they even don't question Yuyuko because she's already dead in SSiB.
